Nutrition Assessment

Emphasis on understanding and use of methods appropriate for measurement of nutritional risks in epidemiological or population studies.

Management of Nutrition and Dietetic Services 

An in-depth knowledge of different types of food systems and food service management. Include development of the skills necessary to guide practice in the management and leadership of food and nutrition service operations.

Advanced Topics in Medical Nutrition Therapy

Focuses on understanding evidence-based interventions using the Academy of Nutrition and Dietetics' Evidence Analysis Library, science-based, and reputable sources for treatment of these diseases and the role of health professionals in management and treatment of nutrition related diseases.

Meet Professor Dorothy Chen-Maynard, Ph.D.

Dorothy Chen-Maynard
Dorothy Chen-Maynard, professor of health science and human ecology, teaches an array of courses at CSUSB, including cultural foods, culinary arts, principles of nutrition, and assessment and research methods. She was the recipient of the 2020-21 CSUSB Outstanding Service Award for her extensive and sustained contributions to students, the campus and the greater community. Dorothy loves CSUSB for giving her multiple opportunities to make a difference, including founding the CSUSB Philanthropic Foundation to manage generous gifts for the benefit of the university.
