About Nutritional Science and Dietetics at CSUSB

If you’re passionate about food, nutrition, and how they impact health, CSUSB’s Bachelor of Science in Nutritional Science and Dietetics may be the perfect fit. In this program, you’ll build a strong foundation of science-based knowledge and practical skills that prepare you for a variety of careers in nutrition, wellness, and dietetics.

This degree also sets you on the path to advanced study. The Commission on Dietetic Registration requires a master’s degree to sit for the credentialing exam to become a Registered Dietitian/Nutritionist (RDN). After completing your bachelor’s degree at CSUSB, you’ll be eligible to pursue a master’s degree and required internship, giving you the preparation you need to take the exam and become an RDN.

Nutritional Science professor

A Bachelor of Science degree in Nutritional Science and Dietetics opens the door to a variety of rewarding careers. Graduates go on to become Registered Dietitian Nutritionists (RDNs), Nutrition and Dietetics Technicians Registered (NDTRs), Certified Dietary Managers (CDMs), and more. You might find yourself working in hospitals, schools, healthcare clinics, food service, or private practice.

Many professionals also choose to specialize in areas such as diabetes care, weight management, cardiovascular health, oncology, or sports and fitness nutrition. According to the U.S. Bureau of Labor Statistics, demand for dietitians and nutritionists is projected to grow faster than average, making this a strong and stable career choice.

Sample Courses

Fundamentals of Human Nutrition

This course studies the impact of chemical, physiological and metabolic processes of food and nutrients on health and disease prevention. You’ll learn the function, regulation and use of macronutrients, micronutrients and water, as well as energy balance, nutritional standards and more.

Problem Solving Skills for Health Science

Problem-solving and critical thinking skills are necessary for all higher-level Health Science courses at CSUSB. Through case studies and problems, you’ll learn more about epidemiology, nutrient and food composition, recipe conversion, energy intake and other topics.

Cultural Practices and Cuisines

This study of world food patterns covers ingredients, cooking and food preparation methods, meal patterns and food customs of people around the world. You’ll deepen your understanding of global cultures, customs and practices with respect to nutrition and health.

Opportunities for Students

As a Nutritional Science and Dietetics student at CSUSB, you’ll find plenty of ways to get involved and build your experience outside the classroom. You can join the Nutrition Student Association, connect with professionals through the Academy of Nutrition and Dietetics and the California Academy of Nutrition and Dietetics, and even become eligible for a CalFresh Healthy Living grant.
